Asian Inspired Immune Boosting Soup

Try this Asian inspired soup, boosting your immunity has never been so easy and delicious!  I like to eat this soup when I want to boost my immunity, when weather changes or anytime that I want a quick and satisfying meal.
 
Ingredients:
1 sliced Daikon
1 head Bok Choi
2 King Oyster or Shitake Mushrooms
Filtered Water
Fresh Grated Ginger
Choppled garlic, 1 to 2 cloves, more is better!
Miso Paste
Tamari (Gluten free soy sauce)
Cilantro
Green Onion
Paper Thin Rice Noodles (optional)
 
Wash and slice the Daikon, Bok Choi, and King Oyster Mushrooms; add filtered water and bring water to boil, then simmer for 5 minutes.  Add grated ginger and garlic to taste.  Both ginger and garlic have incredible immune boosting powers, so if you’re feeling low, load on either one!  Let the soup cook for 5 minutes, then rest for another 5 minutes.  If you want noodles, add 1 cup of paper-thin rice noodles after the vegetables. are cooked.  Add 1-2 teaspoons of miso and tamari to taste.  And just before serving add chopped cilantro and green onions. 

This soup is just what your body craves when you want something easy and interesting; it's filling and healthy, leave out the noodles if you are trying to heal any gut issues.  Cilantro is a natural detoxifier that helps to remove heavy metals, Mushrooms are one of the very few foods that contain vitamin D..  Garlic and Ginger are immune boosters, along with the hydration of the warm soup gives your cells what they need to fight off anything that makes you feel less than great. 

The soup should take no more than 20 minutes from deciding what you want to eat, chopping it up, and sitting down to enjoy it.  Depending on where you buy your produce the cost should be under $10,  Preference is to use organic ingredients as much as possible.
